Recipe of the week: Pasta salad and tzatziki
Today it's a very warm day, and even though the Moroccans prefer to eat and drink warm even though it's hot outside, me I prefer to eat and drink cold.
So today I've made a pasta salad with cucumber, iceberg salad, onion, paprika, tomato and olives. Everything from the farm and garden! The tzatziki I make of 500 gram creme fraiche, 4 clovers of garlic, 1 cucumber, salt and I have garnished with olive oil, pepper, garlic marinated olives and mint.
Preparations: 11 minutes to cook the pasta
Cooking time: 20 minutes
300 gram pasta or macaronis
500 gram creme fraiche
1 iceberg salad
1 yellow onion
4 clovers of garlic
A handful of black olives
How to do:
Cook the pasta, drain them and let them cool off.
Chop the iceberg salad and put the iceberg salad some olive oil and vinegar in the bottom of a bowl.
Chop the paprika, onion, 1 cucumber and the tomatoes and put it with the iceberg salad.
Now, grate the other cucumber over a deep plate or a bowl, and then drain it off it's water with your hands.
Put the creme fraiche in a bowl and grate the garlic cloves over.
Mix it together with the cucumber, add some salt.
Garnish the tzatziki with olive oil, mint, pepper and olives.
Mix the pasta with the salad, top with some more olive oil, vinegar, salt and pepper.
Ready to serve with a nice bread to dip in the tzatziki!
