Recipe of the week: Waffles filled with bacon and cheddar cheeseHi everyone! Long time no see, again
I haven't posted anything for some time now, but here I go again

Me, I'm currently in Sweden in our winter house Ripan Lodge, having the best time ever. I feel so blessed to have the opportunity to get a white Christmas and New Year's Eve, with all the snow and the cold. It's really joyful.
I've been skiing since I was 3 years old, but since my dad bought skidoo's I have only been racing with the skidoo, and not skiing at all. Well, I have realized though, how amazingly nice it is, for body, mind and soul, to go crosscountry-skiing. So that's what I'm doing every day.
Well, today I did some lunch to the family. Waffles, but with my own twist since I never seem to get enough full of ordinary waffles.
Here's the recipe for 4 big waffles, it takes 45 minutes to do:
3 dl milk
3 dl flour
2 tbsp baking powder
A handfull of chives
Do like this:
1. Boil the potatoes for approximately 15 minutes. Meanwhile, fry the bacon and put them aside to cool down.
2. Once the potatoes are done, take them up and put them in an ovenproof form of glass,
Mash the potatoes.
3. Pour the flour, milk, baking powder, eggs and the chives over the mashed potatoes and mix it thoroughly
Warm the waffle iron
4. Grease the waffle iron
5. Put some of the batter in the iron, and then put 2 pieces of bacon and 1 piece of cheddar cheese, then you add some more of the batter
Bake the waffle until the waffle iron shows a green light.
Voíla! Your waffles are done and ready to serve with your own choice of accessorie.
